Chapchae

This was my first time to cook Korean food. Pretty good!

Drain 6 dried black mushrooms (tenga ng daga) soaked in hot water for 30 minutes. Cut out and discard the stems and any hard parts. Thinly slice the mushroom caps.

Add 5 ounces of young fresh spinach leaves to a large saucepan of boiling water. Cover and quickly return to a boil. Boil for 2 minutes, then drain and rinse under running cold water. Drain well and squeeze out as much water as possible. Separate the leaves.

Heat vegetable oil and sesame oil in a deep skillet. Add garlic and chili, and stir fry for 10 seconds. Add Chinese cabbage leaves, mushrooms, zucchini and carrot and stir fry for 3 minutes until the veggies are tender but still crisp. Turn the heat to low and stir in cellophane noodles, 1 T soy sauce, 1 t sugar and salt. Cook for 2 minutes more then

It was everything I imagined. No drama, all smiles and a happy welcome for my baby Kevin. Our new house in Antipolo looks and feels great, and I could see it in my parents' and siblings' eyes. I could see a sense of fulfillment in them as they used their own money to good use. My aunts, uncles and cousins were awesome. They were so excited to see Kevin and helped us out anyway they can. My friends were so nice to meet up with us.&nbsp; Some even took the time to visit us in our new home and we really felt special.&nbsp; All in all, I'm so glad I took Kevin home - well, one of his "homes". I am glad that he was able to meet his big family and feel the love of everyone. <br><br>Now that we are back in Japan, I realized that although it felt great to have all the help in Manila, (I had the chance to rest and have some "me" time while everybody took care of Kevin) this is our home. Our home will be anywhere where Tim, Kevin and I are together, as a family.&nbsp; Now th...

Feeding issues...

Waaah. Talk about Kevin being inconsistent! One week we are in breastfeeding heaven, another week, he cries hysterically during our feeding sessions - which forces me to give him the bottle with my breastmilk, or formula. Today, it took us 1 1/2 hours for a feeding session because in between bottle feeding, he would sleep or cry or laugh or smile. Haha. Napapraning na ko! I want him to complete his feeding sessions naman kasi if I let him go without completing his meal, he wakes up every hour to feed - which is not okay. <br><br>Haaay. Please tell me this gets better. Please. <br>

Trip to Kamakura

A lot of people ask me if I am enjoying Japan. Tokyo is great - but I know that Japan is more than just tall buildings, bright lights and interestingly dressed high-heeled women. Tim wanted so much to get me out of Tokyo but because we learned that we were pregnant 2 weeks after moving here, we really didn't get to see much of Japan.
But now that I am back in shape (well, not really) we vowed to explore Japan more and take day trips (for now, while Kevin is still small) to enjoy the land of the rising sun.
Today was an awesome day. Kevin was well-behaved (well, we had 3 poopy and stinky diapers and 3 costume changes) and really enjoyed the change in scenery. He was mostly asleep in the car (it took an hour and a half to get to our destination), and mostly awake during our visit to the temples in Kamakura. We went to Tsurugaoka Hachiman-gū (<a href="http://en.wikipedia.org/wiki/Tsusugaoka_Shrine">http://en.wikipedia.org/wiki/Tsusugaoka_Shrine</a>) and really enjoyed it. Tim also enjoyed shooting photos with his new Pentax camera, and I took...
